How to Make Sausage, Green Beans and Potatoes in an Electric Pressure Cooker

Aunt Lou here.

Growing up, I was in our church’s bell choir. So every Wednesday, I would go to my friend’s house. Her mom had a stove-top pressure cooker. That was the very first time I had this recipe. So, once I started trying to make recipes in my Instant Pot, I knew I had to make this dish. Karen, this one’s for you! Thank you for the countless times you fed me wonderful meals!

Instructions

  • Place your potatoes in the bottom of your Instant Pot

  • Top with your onion

  • Add your sausage slices, green beans and water

  • Sprinkle with salt, pepper and red pepper

  • Secure lid and set lid to seal. Set on Manual with the warming feature off (press manual button twice on Instant Pot to turn warming off) for 30 minutes. (Note: It will take approximately 15 minutes for pot to reach full pressure before the 30 minute timer will start.)

  • Let Instant Pot NATURALLY release (Do not immediately use quick release) for at least 15-20 minutes before quick releasing. I personally prefer to let it completely naturally release.

Hey y’all something that wasn’t mentioned – whether you make this in the IP, slow cooker or on the stove top – y’all better have some cornbread ready to sop up the ‘liquor* and don’t leave any of it behind bc its got lots of flavor too!

The meal turned out great. The beans were a little soft, so I think I will fold them in after cooking the next time. Hard to stop eating it.

      Hi Thomas!

I haven’t tried this with stew beef, but love the idea! With the beef cut into the small cubes, it should be fine to add it without pre-cooking. If you give it a try, let me know how it goes!

When it calls for one onion, can you tell me what kind of onion that means? I feel like I never know what kind of onion to buy for a recipe like this.
    Thanks!

      Hi Paige!

I haven’t tried this recipe with baby reds. We test all the recipes before we post them to make sure our reader’s have the best chance at success, so I don’t want to steer your wrong. Baby reds are a softer potato, so that would affect the cooking time. If you give it a try, let me know how it goes!

Hey Paige, Aunt Lou! I can tell you that baby red potatoes are FABulous in this! Just wash ’em off and quarter, if larger reds you might have to cut smaller, and put ’em in! Cook time same. 🙂
Also those baby reds work well in the crock pot or stove top too! hehehehee

      Hi Stephanie!

I haven’t tried halving this recipe. You will probably need to reduce the cooking time since there won’t be as much to cook. If you give it a try, let me know how it goes!

This recipe is a keeper! Hubby liked it so much, he printed out another copy, in case I lost my copy. I made the crock pot version, following the recipe as written, and it turned out great! One of my favorite things: After cooking the green beans all day with the sausage, the green beans reminded me of those my mom cooked (Southern-style?). The longer they cooked, the darker, softer, and tastier they became. Yum! I am so glad I discovered your site.

      Hi Eileen!

I’m so glad you like this recipe! It is one of my personal favorites (in the crock pot and instant pot)! And I’m with you, I love some good ol’ fashioned green beans cooked low and slow. Gramma used to cook green beans like that all the time. Every time I smell them, I am transported back to her kitchen when I was a kid. Thanks for letting us know you like the recipe and for your kind words!

What is the reason for turning off the warming feature? I didn’t even know there was a warming feature, nor have I seen it mentioned in recipes for the IP. Is that feature available in the original model that first came out…..that’s what I have.

      Hi Vicki!

We like to turn off the warming feature so that the food does not continue cooking and become overcooked. It is a feature that turns on automatically, if you do not push the manual button twice to make it not come on automatically. It is on all the Instant Pot models.

      Hi Wendy!
We use whatever brand is on sale, however, if you want the big flat green beans, we buy Italian-Style green beans. They remind us of the garden green beans we used to grow as kids. Hope that helps!
